ALL my coffees are hand inspected

I take every aspect of roasting coffee very serious, All my coffees, every batch, gets inspected before and after the roast. First is the hand sorting . Removing defects, and foreign debris . After the roast I will send the coffee through the destoner . I don't want this stuff in any of my coffees ,and definitely not in yours

WELL, it time to roast

I've been roasting coffee now for four years, my roasting log tells me that I have had over 2,000 roasts. Roasting on a one pound machine equals 2,000 times of me learning, trying different roast profiles, recording my roasts,
and studying my results, all in a attempt, to make the best coffee I can. Now its time to share my results with you.

This is where all the work pays off. To open a bag of fresh roasted coffee , is amazing. The difference is night and day. To call my coffee a specialty coffee, demands the respect and quality that I stand for. I want to make the best coffee I can for you to enjoy.

A man to listen to

This man, is a man to listen and learn from. It would be hard to show all his accomplishment in the coffee industry. In my four years for studying coffee, trying every brewing methods out on the wed. James Hoffmann methods work the best. I highly recommend watching them . He gives them all to you . Thanks James.

Be Careful of the Bloom

Blooming your coffee, results in a even extraction. Which means more flavor and a richer brew. The Bloom is when Carbon Dioxide gas which is stored in the bean rappidly escapes. Carbon Dioxide is a natural by product of the roasting process. A rule of thumb when brewing fresh coffee in any kind of coffee brewer with a basket is to make half batches to allow for the Bloom and not to overflow the basket.

My First Roaster

I have been roasting coffee for about five years now. My coffee journey started with a small expresso machine. Finding out, that only fresh coffee can make expresso right. I was unable to find freshly roasted coffee, this led me to roast some online green coffee beans, and well, I was roasting and fell in love.

I have been to many local roasters in the New York/New Jersey area and have tried different beans from all over the world roasted to all different levels.
